Another Tater Tot Casserole
I’ve used several different recipes but I think this one is my new fav.They’re all pretty similar, ground beef, cream of mushroom soup & tater tots. But this one has sour cream, and you cook up a little onion with the hamburger.
And I’ve never seen too-much-cheese. In fact I don’t think it really exists, so I sprinkled some under the tots as well as on top of them.
For a minute I even thought about only “totting” half of it since I’m trying to go with lower carbs, but my love of the small crispy potato overwhelmed me.
1 1/2 – 2 lbs. ground beef
1/2 – onion, diced
1 – 32 oz package of tater tots
1 – 10 oz can cream of mushroom soup
1 – 8 oz container sour cream (I used light)
1 – cup milk
2 – cups grated cheddar cheese (I used shredded colby jack)
Brown ground beef and diced onions, adding, pepper, seasoning salt and garlic salt to taste. Drain. Pour ground beef & onion mixture into the bottom of a 9 x 13 casserole dish. In a separate bowl mix together the soup, sour cream and milk.
Pour the soup mixture over on top of the ground beef layer spread evenly to cover the meat mixture. (This is where I sprinkled a handful of the cheese over the mixture.) Top with tater tots, sprinkle with grated cheese over the entire casserole. Bake at 350 degrees uncovered for 30 minutes or until the casserole is bubbly and cheese is completely melted. (I also cooked it for 15 minutes before sprinkling the cheese on top.)
